Eggplant Pizzas

Fun way to get your kids to eat their veggies. I suggest adding pepperoni, mushroom, and some peppers.

Ingredients to use:

  • 2 pieces of eggs
  • half teaspoon of salt
  • 1 cup all-purpose flour
  • 1/4 teaspoon ground black pepper
  • 1 large eggplant, sliced into 1/2 inch rounds
  • half teaspoon dried oregano
  • 1/4 cup vegetable oil
  • 1 (14 ounce) can pizza sauce
  • 1 1/2 cups shredded mozzarella cheese

Procedure:

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Beat the eggs in a bowl.
  3. Mix the flour, salt, pepper and oregano in a 1 gallon resealable plastic bag.
  4. Dip each eggplant slice in the egg then drop the eggplant in the flour mixture one at a time, shaking the bag to coat the eggplant.
  5. Heat the vegetable oil in a large, deep skillet over medium heat.
  6. Place the eggplant slices in the skillet to cook, turning occasionally and wait until evenly browned.
  7. Drain the eggplant slices on a paper towel-lined plate.
  8. Arrange the eggplant in one layer on a baking sheet.
  9. Spoon enough pizza sauce to cover each eggplant slice.
  10. Top each eggplant with mozzarella cheese.
  11. Bake in the preheated oven until the mozzarella cheese is melted. Do this for about 5 to 10 minutes.

Chicken Nuggets Like No Other

These are really easy and taste great! Kids would love them!

INGREDIENTS:

  • 4 skinless and boneless chicken breasts
  • 2 cups of corn oil
  • 1 piece beaten egg
  • 1/3 cup of water
  • 1/3 cup of all-purpose flour
  • 1 1/2 tablespoons of toasted sesame seeds
  • 1 1/2 teaspoons salt

PROCEDURE:

  1. Rinse chicken with cold water and pat dry with paper towels.
  2. Cut into 1x1x1/2 inch pieces.
  3. Fill a deep fryer with corn oil, no more than 1/3 full. Heat to medium heat.
  4. Place egg and water in a small bowl and mix well.
  5. Add the flour, sesame seeds and salt. Stirring them until a smooth batter is formed.
  6. Dip chicken pieces in batter and drain off any excess.
  7. Add battered chicken, a few pieces at a time, to the hot oil.
  8. Fry about 4 minutes or until golden brown.
  9. When done, remove chicken from oil.
  10. Drain on paper towels.

Pretzel Dogs

Hot dogs wrapped in a pretzel are a perfect snack. Easy to make and prepare, perfect for any occasion.

 

Jan's Pretzel Dogs

 

Ingredients you’ll need:

  • 1 (12 fluid ounce) can or bottle room temperature beer
  • 1 tablespoon white sugar
  • 2 teaspoons kosher salt
  • 1 (.25 ounce) package active dry yeast
  • 4 1/2 cups bread flour
  • 1/4 cup of unsalted melted butter
  • 1 large egg yolk
  • 1 tablespoon of water
  • 10 cups of water
  • 2/3 cup of baking soda
  • 1/4 cup of kosher salt, divided – or to taste
  • 18 pieces of hot dogs

Procedure:

  1. Heat the beer in a saucepan over low heat. Wait until it reaches 110 degrees F (45 degrees C).
  2. Combine the warm beer, sugar and 2 teaspoons of kosher salt in a bowl.
  3. Sprinkle the yeast on top and let it stand for 5 minutes. Wait until the yeast begins to form a creamy foam.
  4. Place the bread flour and butter in a bread machine.
  5. Add the yeast mixture and then select the dough cycle.
  6. Preheat an oven to 450 degrees F (230 degrees C).
  7. Line 2 baking sheets with parchment paper or grease with vegetable oil.
  8. Beat the egg yolk in a small bowl with 1 tablespoon of water.
  9. Set it aside.
  10. Stir baking soda into 10 cups water in a large pot until dissolved and bring to a boil.
  11. Turn the dough out onto a lightly-oiled surface, and roll into a 10×20-inch rectangle.
  12. Cut the dough into 18 1-inch wide strips, then wrap each strip tightly around a hot dog in a spiral, pinching the edges to seal, and leaving the ends open. About half an inch of hot dog should peek out of each end of the dough wrapper.
  13. Drop 2 or 3 dough-wrapped hot dogs into the boiling water for 30 seconds.
  14. Arrange the boiled hot dogs on the prepared baking sheets.
  15. Brush each pretzel dog with the egg yolk mixture and sprinkle with the remaining 1/4 cup salt.
  16. Bake in the preheated oven until golden brown, about 15 minutes.

Donut Muffins

Mini muffins that taste just like cinnamon sugar doughnut holes! The secret ingredient? It’s nutmeg.

Ingredients to use:

  • 1/2 cup white sugar
  • 1/4 cup melted margarine
  • 3/4 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1 cup all-purpose flour
  • 1/2 cup white sugar
  • 1/4 cup melted margarine
  • 1 teaspoon ground cinnamon

Step by step procedure:

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Grease the 24 mini-muffin cups.
  3. Mix 1/2 cup of sugar, 1/4 cup of margarine and nutmeg in a large bowl.
  4. Stir in the milk, then mix in the baking powder and flour until just combined.
  5. Fill the prepared mini muffin cups about half full.
  6. Bake in the preheated oven until the tops are lightly golden for about 15 to 20 minutes.
  7. While muffins are baking, place 1/4 cup of melted margarine in a bowl.
  8. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon.
  9. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture.
  10. Let them cool and serve.
